I think I just received a message asking for Chocolate Cake. In my view Devil’s Food Cake is the best choc sponge you can make; moist, fudgey and super rich.

Devil’s Food Chocolate Layer Cake

  • 1 and 3/4 cups (220 grams) all-purpose flour
  • 1 and 3/4 cup (350 grams) granulated sugar
  • 3/4 cup (95 grams) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup (240 ml) buttermilk*
  • 1/2 cup (120 ml) vegetable oil (or canola oil, or melted coconut oil)
  • 2 large eggs, at room temperature*
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) freshly brewed strong hot coffee
